Our Story

A Home for everything Kashmir

Where It Began

An Extension of Home

Founded by Nalini Moti Sadhu and Surender Sadhu, Matamaal was built to preserve Kashmiri Pandit food in its most familiar form: generous, precise, deeply personal, and rooted in home kitchens.

Home

Family recipes, Kashmiri memory, and the warmth of a grandmother's table.

2016

Nalini Sadhu began serving Kashmiri cuisine from home in Gurugram.

Today

Matamaal carries that heritage through restaurants, catering, and Kanz & Muhul.

“Matamaal is an extension of our home, an experience which is the perfect escape from the fast-moving city life.”

The Cuisine

A Cuisine Built on Restraint and Aroma

Kashmiri Pandit food is distinct because it does not chase excess. It builds depth through technique, measured spice, and ingredients that carry the valley's fragrance into every dish.

01

No onion, garlic, or ginger in traditional Pandit preparations.

02

Depth comes from fennel, dry ginger, saffron, cardamom, and Kashmiri chilli.

03

Vegetables, meats, breads, and teas are treated as one complete table.

Craft & Process

How We Cook

Authenticity is handled in the kitchen, not just in the copy.

Fresh Ingredients

Saffron, Kashmiri chilli, fennel, and dry ginger are chosen for origin and character.

Traditional Methods

Slow cooking, hand work, and Wazwan techniques keep the food close to its roots.

Chef Nalini's Guidance

The kitchen stays founder-led, with Kashmiri chefs cooking under Chef Nalini's eye.
